Our 100% Cacao Paste is sourced from Cahabon, Alta Verapaz, Guatemala—a region known for its rich biodiversity and dedication to sustainable farming practices. This cacao comes from a collaborative effort involving 270 dedicated farmers across 54 farms. These farmers work together to cultivate cacao in harmony with the surrounding landscape, where the land flourishes with a mix of chili, pepper, bananas, plantain, vanilla, cinnamon, cardamom, citrus, mango, and various vegetables.
Cahabon cacao is carefully fermented for 7 days, a process that enhances its complex flavor profile.The result is a cacao that carries fruity notes, particularly a hint of banana, with a subtle bitterness and creamy, milky depth.

Nestled in the misty highlands of Alta Verapaz, Guatemala, the cacao of Entre Nubes is cultivated across 27 hectares of dedicated farmland by a vibrant community of 33,000 people. This region is a living testament to biodiversity, where cacao grows harmoniously with madre cacao, cardamom, cinnamon, copal, palo blanco, banana, and pimienta gorda. The integration of these plants creates not only a sustainable agricultural ecosystem but also contributes to the cacao’s remarkable depth and complexity.
The fermentation process, spanning 7 to 8 days, is carefully designed to bring out the cacao’s distinctive flavor profile. It opens with a gentle fruity acidity, transitioning into fresh notes of tropical fruit, raw nuts, and rich cocoa. Hints of green grass and damp earth add an intriguing layer of freshness, grounding the experience in the terroir of its origins.
